When I think of holidays with my family, the meals were always at my Parent’s home. Served in the dining room, which was next to the kitchen, I remember the procession of food being put on the table. Always , there were several jello molds. One of which was the lime jello mold. It didn’t matter what holiday meal we were eating, those molds were always part of the menu. When the time came that the holiday meals shifted to my own home, the tradition continued.
To me and to my family, it is not a meal unless at least one of those jello molds is part of the menu. This particular lime mold evokes wonderful memories of family celebrations and taste great with any menu. While we sometimes joke about the color, as you can see from the missing piece, at our last celebration someone couldn’t wait and sneaked into the kitchen for a slice before dessert was served. It’s that good.

Ingredients
- 1 (20 oz.) can crushed pineapple, drained (but save the juice)
- 1 (6 oz.) pkg. lime Jello
- 2 cups (1 pint) dairy sour cream
- 1/2 cup chopped walnuts
- 1 small can mandarin oranges, drained
Preparation
Add enough water to the pineapple juice to make about 1 3/4 cups of liquid. Heat the liquid to boiling. Next add the liquid to the Jello in a bowl and stir until the Jello is dissolved. Place this into the refrigerator and remove when it’s chilled and it’s slightly thickened. In large bowl pour in your sour cream, add the crushed pineapple, and gradually add the lime Jello. Almost done. Add in your nuts and mandarin oranges then pour into your mold and put back into the refrigerator to chill until set (usually at least three hours, though best overnight).
