Abuela's Stewed Pinto Beans

Stewed Pinto Beans

One of my fave foods is stewed beans.  My abuela used to make them every time I came over because she knew I loved them.

Ingredients

  • 1 15 oz. can Pinto Beans
  • ½ green pepper, chopped
  • 2 tablespoons Sazon
  • 1 medium potato, cubed
  • 4 oz.  Tomato Sauce
  • 1 tsp Olive Oil

Preparation

  1. Heat oil in medium saucepan.
  2. Add pepper and cook until soft.
  3. Add beans, sazon, tomato sauce and potato and cook on low for 40 minutes.

Can be made vegetarian. Ham or chorizo may be added if desired to vary flavor.

  1. We made this recipe today. It was so delicious. Because we didn’t have Sazon on hand we improvised and added in garlic powder, salt, black pepper, fresh cilantro, and minced onions. We also used more tomato sauce; around 8 oz. (226g).

  2. Looks tasty. I don’t buy sazon. My home made substitute is 2 Tsp. coriander, 1 Tsp. cumin , 1/4 Tsp. salt, 1/4 Tsp. white pepper, 1/4 Tsp. turmeric, 1/4 Tsp paprika, 1 TB dried oregano (or fresh equiv). 2 Fresh Garlic cloves or 1 Tsp. Garlic powder if you want the sazon completely dry.
