I was lucky growing up that my Mom enjoys baking and we always had yummy treats in the house. Often times, she’d be baking something for a function and my brothers and I would reap the benefits of the broken or unevenly cut pieces (which we affectionately coined “rejects”) but they all taste the same so no complaints from us! Over the years, I developed a similar love for baking and enjoy exchanging recipes with my Mom.

My Mom and I both adapt this recipe depending on what kinds of baking bits we have in the pantry. I often use one 12 oz package of white chocolate bits and one 12 oz package of semi-sweet. I’ve also skipped the chocolate bar if I don’t have one in the house; you can always add in a few more baking pieces but the cookies are plenty sweet enough if you leave out the chocolate bar entirely. As for the nuts, my favorite are walnuts and toasting them for a few minutes adds to the nutty flavor. Another family secret to having freshly baked cookies at a moment’s notice is to take some of the dough, form it in a log (like a cookie roll that you’d buy in the store), roll it in parchment paper then seal in plastic wrap and put it in the freezer. Remove from the freezer a few minutes before you are ready to bake, slice into disks and bake. Yum!

Ingredients
- 2 cups butter
- 4 cups flour
- 2 tsp. soda
- 2 cups sugar
- 5 cups blended oatmeal
- 24 oz. chocolate chips
- 2 cups brown sugar
- 1 tsp. salt
- 1 8 oz. Hershey Bar (grated)
- 4 eggs
- 2 tsp. baking powder
- 2 tsp. vanilla
- 3 cups chopped nuts (your choice)
Preparation
- Measure oatmeal and blend in a blender to a fine powder.
- Cream the butter and both sugars.
- Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda.
- Add chocolate chips, Hershey Bar and nuts.
- Roll into balls and place two inches apart on a cookie sheet.
- Bake for 10 minutes at 375 degrees.
