Palak Paneer (Spinach & Cheese Vegetable)

I have known the founders of Ancestreats  father for many years. While we have sort of stopped talking business sometime back, I treat him like a friend, with whom I can exchange thoughts and jokes and I realize how fortunate we have been in our own ways. One area in which we have always connected is our appreciation of family. The family plays a very important role here in India. We take pride and joy in our family life and this includes our traditional foods. Together with our cook at the Bed and Breakfast I run, we have noted the details of a vegetarian recipe that is quite popular with the foreign guests.

Ingredients

Recipe makes four servings.

  • 500gms fresh spinach
  • 250gms white cottage cheese (Indian farmer’s cheese)
  • 2 chopped onions, ginger, garlic paste
  • 4 chopped tomatoes
  • 5-6 table spoon oil
  • Red chili powder to taste
  • 1 pc cinnamon
  • 2 pc cardamom
  • Salt to taste

Preparation

Clean and wash the spinach – then boil it in water.

Now beat it in a mixer.

Heat the oil in a pan. Add cinnamon, cardamom , onions and ginger-garlic paste and stir-until it gets brown in colour.

Now add chopped tomatoes and red chili powder according to the taste and make a thick gravy.

Stir it for some time and then add salt to taste.

Cut the cheese into cubic form and put it in to the gravy you made. Stir for 2 minutes.

Now add the spinach and cook for 4-5 minutes.

Take out and its ready to eat.
